Delectable Dinner Recipes from Ray’s Catering

Ray's Catering - wedding seafood catering for Seattle area weddings

Looking for a few impressive dishes to serve on that new china you registered for, or to prepare for your future in-laws? The talented chef at Ray’s, Seattle’s beloved seafood restaurant and catering company, has shared a few of his favorite recipes with us today, and boy do they look good! Friends, let’s get cookin’!

Coconut Prawns with Sesame Plum Sauce
Serves 6 as an appetizer

Ingredients:
2-3 quarts canola oil for frying
24 prawns (16-20 per pound), tail on

Seasoned flour:
3 tablespoons flour
1 teaspoon kosher salt

Batter:
1/2 cup milk
1 cup flour
2 eggs
2 teaspoons kosher salt
1/4 teaspoon curry powder

Coating:
2 cups unsweetened flaked coconut
2 cups panko bread crumbs

Set up a deep fryer and heat oil to 300°F.

Set up three bowls. In the first bowl, combine flour and salt. In the second bowl, combine milk, flour, eggs, salt and curry powder to make a batter. In the third bowl, combine flaked coconut and panko.

Holding the tail, dredge each prawn in the seasoned flour and gently shake off excess. Then dip prawn in batter. Third, toss prawn in coconut mixture to coat completely and pat gently to press mixture into batter.

Deep-fry immediately in heated oil until golden, about 30 seconds. Using a slotted spoon, transfer prawns to a plate lined with a paper towel to drain. Serve warm with Sesame Plum Sauce.

Sesame Plum Sauce

1 cup plum sauce
2 tablespoons mirin
2 tablespoons rice wine vinegar
1 tablespoon toasted sesame oil
1 teaspoon sambal oelek
1 tablespoon dry sherry
Pinch powdered ginger
1/2 teaspoon black sesame seeds
1/2 teaspoon sesame seeds

Combine all ingredients and mix well.

Parmesan-Crusted Halibut with Lemon Caper Beurre Blanc

Ingredients:
1/2 cup flour
2 eggs
2 tablespoons water
2 cups panko bread crumbs
1 cup shredded Parmesan cheese
Zest of 1 lemon, chopped
3 tablespoons olive oil
4 6-ounce halibut fillets, skin removed
4 sprigs basil as garnish

Place flour in a small bowl. In a second bowl, beat eggs and water. In a third bowl, combine panko, Parmesan and chopped lemon zest. First, dredge the flesh side of halibut fillets in the flour, shaking off the excess. Next, dip the flesh side in the egg. Third, dredge fillets in the panko mixture to coat and then pat gently to press the mixture into the egg.

Preheat oven to 400°F. Heat olive oil in an ovenproof nonstick pan on medium-high heat. Carefully place fillets crust side down in the pan. Sear until a golden-brown crust forms, about 4 minutes. Turn fillets over and place the pan in the preheated oven. Roast until the centers are pearly white and opaque, about 3 to 5 minutes depending on the thickness of the fillets. 

Lemon Caper Beurre Blanc

Ingredients:
1 teaspoon canola oil
2 tablespoons finely chopped shallots
1 cup Chardonnay
1 cup lemon juice
1/2 cup heavy cream
2 tablespoons capers
1/4 pound unsalted butter at room temperature, cut into small pieces
Salt
Freshly ground black pepper

In a wide 2-quart sauté pan, heat oil over medium heat and sauté shallots until translucent. Add Chardonnay and lemon juice. Bring mixture to a rolling boil.  Reduce heat to medium and boil gently, stirring occasionally, until mixture reduces to about 3/4 cup of liquid, about 15 to 20 minutes. Add cream and bring to a boil again. Reduce heat to medium and boil gently, stirring occasionally, until about 3/4 cup liquid remains, about 10 to 12 minutes. Add capers and stir. Add butter a piece at a time, stirring until well incorporated. Remove from heat. Season with salt and pepper to taste. Serve immediately. Yield: 1 cup.

Lemon Mousse on Macadamia-Graham Cracker Crust with Lemon Curd
Serves 12

Crust:
3/4 cup macadamia nuts
1-1/4 cups graham-cracker crumbs
3 tablespoons sugar
4 tablespoons unsalted butter, melted

Preheat oven to 375°F. In a food processor, chop macadamia nuts into small pieces using on/off pulses. Add graham cracker crumbs and sugar, and process until combined. Add melted butter and mix until combined. Press mixture into a 9-inch springform pan and bake until golden brown, about 12 minutes. Cool completely.

Lemon Curd:
1/4 cup sugar
9 egg yolks, reserving 3 egg whites for the lemon mousse filling
1/2 cup lemon juice (4-5 lemons)
8 tablespoons cold unsalted butter, cut into pieces

In a large stainless steel bowl set over a saucepan of simmering water (do not let bottom of bowl touch water), whisk together sugar, egg yolks and lemon juice until mixture thickens to a pudding-like consistency. Remove from heat and add butter. Stir until melted. Refrigerate.

Lemon Mousse Filling:
1 pint heavy cream
3/4 cup sugar
3 egg whites
2 envelopes powdered gelatin
4 tablespoons cold water
1/2 cup lemon juice (4-5 lemons)
Zest of 2 lemons
1 cup Lemon Curd

Garnish:
Reserved Lemon Curd
Fresh berries

Whip heavy cream until it holds soft peaks. Set aside in refrigerator.

Dont answer the phone during this next section! Timing is critical. First, fill the bottom of a 1-quart saucepan with 1/4 inch of water and add sugar. Cook, without stirring, on high heat, brushing down sides of pan with water to prevent crystals forming. Monitor the temperature of the sugar syrup with a candy thermometer. When the temperature reaches 230°Fahrenheit, begin whipping the egg whites in the bowl of an electric mixer just until they reach stiff peaks but are still shiny and then stop whipping. When the syrup reaches 250 to 253°Fahrenheit, turn the mixer back on high speed and very slowly pour the sugar syrup down the side of the mixing bowl, being careful to not let the syrup touch the beaters or it will crystallize. Continue mixing until the meringue has cooled.

When the meringue is almost cool, dissolve powdered gelatin in 4 tablespoons cold water for 1 minute. Whisk together gelatin mixture and lemon juice in a large stainless steel bowl set over a saucepan of simmering water (do not let bottom of the bowl touch the water) just until gelatin has melted, about 30 seconds. Remove from heat. Add zest and 1 cup of lemon curd, reserving the remaining lemon curd for the top of the finished mousse. Whisk to combine. 

Remove cooled meringue from the mixer and whisk into the gelatin mixture until well combined. Next, fold in whipped cream with a spatula until just combined. Pour mixture over the cooled baked crust. Freeze at least 6 hours or overnight. 

Wrap a hot towel around the outside of the cake ring for a few seconds to release it. Remove cake ring and spread a thin layer of reserved lemon curd over the mousse with a spatula (best done while still frozen). Thaw in refrigerator for about 3 hours before serving. Garnish with fresh berries.

“Our vision for this world traveler-inspired wedding celebration was to take our bride and groom back to an era when traveling was truly seen as an incredibly romantic adventure. We wanted to showcase unique ideas for a wedding reception luncheon and also non-traditional wedding reception attire. Using Sail Bay in Mission Beach, San Diego as our backdrop, we utilized some magical old pieces from our grandfathers to create a true worldly feeling. Old binoculars, a great vintage camera, luggage, and a decades-old barometer really helped to emit a classic feeling of flying, cruising, and boating in true old-school fashion.

We kept the florals simple and streamlined and drew from tropical destinations. Using pincushions and breezy palms, we made them look like specimens in simple glass vessels, showcasing their true beauty. Gold rimmed low ball glasses were adorned with eclectic vintage spoons collected from travels; Hawaii, Norway, England, and Alaska. A gauzy overlay was draped atop khaki linens and lovely turquoise Tandoori-style napkins were cinched with wooden napkin rings. Momental Designs created our delicious looking menus and tied in our traveling motif with an old world map. The place cards were personalized from vintage Air Mail envelopes discovered at an antique shop. We tailored them with our bride and grooms favorite locales like Paris, London, Dubai, and Hong Kong.

Our brides vintage-inspired gold brocade dress was from Priscilla of Boston and the groom donned Tommy Bahama pants, shirt, hat, and a luxe leather weekender bag. After their sophisticated luncheon celebration they sailed off into the sunset on a sweet little sailboat to begin their next adventure together!”

Planning your own DIY candy buffet? Here are a few of our top tips to make it a success:

  • Candy buffets are as much decorations as they are yummy favors, so youll want to have enough candy to create an abundant presentation.
  • A varying selection of large and small glass vases, bowls, and platters makes a charming candy buffet presentation.
  • Choose five to ten varieties of candy and purchase several pounds of each depending on the size of your wedding and the look youre going for.
  • Dont go under one-quarter to one-half a pound of candy per person, or you many run too low.
  • Small Chinese foodstyle take-out containers, vellum or clear plastic envelopes tied with ribbon, or pretty tins make excellent take-home containers for your candy buffet.
  • Include a small metal scoop in each large candy jar for easy use.
  • Label each kind of candy, especially those containing nuts, so your guests can choose wisely in case of health concerns.
  • Hard or wrapped candies work well in warmer climates, but the best choices are candies that you personally love and think your guests will appreciate.

Inside the showroom we were incredibly impressed by the impeccably organized displays that showed off each individual fabric, while at the same time inspired creative exploration. Our brains were crackling with ideas for color combinations and themes! And the ties to fashion were evident everywhere you looked, but especially in the ruffled, layered, corseted and perfectly tailored chair covers. Amazing!

Black Tableware Inspiration for a Fall or Winter Wedding’

In honor of autumn and the raindrops that are falling on the orange and yellow leaves outside my window as I write this, I’m whole heartedly embracing all that’s rich and dark and cozy. I bought fabulous new boots, I turned on my heater, and I’m fascinated by the creative possibilities of incorporating black tableware into a wedding. And this morning, just as I was thinking about how to make the most of this look, I came across this unbelievably beautiful photo collection from photographer Colin Cooke and stylist Paul Lowe on Paul’s blog Sweet Paul (via Snippet and Ink, thanks Kathryn!) and it made me absolutely swoon. Could this meal look any more delectable and luxurious?

The dishes in Paul and Colin’s photos have an organic, rustic look, but I also love these vintage inspired pieces that are popping up all over; sleek, shiny and feminine with a touch of mystery and romance. Rosanna has a Rococo Noir collection that features 9 inch, 10 1/2 inch and 12 inch cake stands, Dauphine candlesticks, and darling sugar and creamer set. Jenn over at The Hostess with the Mostess blog wrote about the line last week, and I loved the look of the products so much that I just had to share. This Serene Sicilian Elopement Ended with a Hike Up Mount Etna

For Marie and Ben, adventure has always been at the heart of their relationship. Their love story spans continents—from the lush jungles of Sri Lanka to the dramatic landscapes of New Zealand—but it was the magnetic pull of Sicily that ultimately led them to exchange vows in the shadow of Mount Etna.

Their Sicilian elopement was the perfect blend of intimacy and natural wonder. With no guests, no fuss, and scenery doing the storytelling, they crafted a celebration rooted in simplicity and intention. The venue, a countryside dimora tucked in the hills near Taormina, offered everything they’d hoped for—a peaceful ceremony with a touch of adventure, far from the hustle and bustle of tourism.

Why They Chose a Sicilian Elopement

Long before wedding planning began, Marie and Ben had already fallen under Sicily’s spell. During a three-week trip a few years prior, they explored the island’s hidden corners, including a spontaneous visit to Stromboli during an eruption cycle—an unforgettable experience that sealed their decision. “It was during this trip we both agreed that Sicily was special and somewhere we wanted to tie the knot.”

When envisioning their day, they knew exactly what they wanted: to feel removed from the noise of the world. “Somewhere with a sense of escape,” they shared. “We won’t have any guests, and scenery is important to us, so anywhere with a lovely backdrop.”

Planning a Day That Felt Like Them

That vision gave their photographers and planners—Italian sisters Benni and Carol of Benni Carol Photography—clear direction. “We knew exactly how to proceed,” the sisters told us. The location they found brought everything together: a quiet property with its own vineyard, traditional architecture, and panoramic views of the countryside with Mount Etna rising in the distance.

Marie and Ben had discovered Benni and Carol through a simple online search, and the connection was instant. “We specialize in planning and photographing elopements all over our home country, Italy,” Benni explains. “And adventurous celebrations like Marie and Ben’s are what we love most.”

The Intimate Ceremony

From the start, Marie and Ben imagined a ceremony surrounded by natural beauty—whether it was a volcano on the horizon or a courtyard with weathered stone. Benni and Carol found a location that brought both to life: a peaceful terrace with hand-built stone walls overlooking vineyards, with Mount Etna right in view.

The setting felt timeless and calm—everything they had hoped for. With only the Sicilian countryside as their witness, they exchanged vows that were deeply personal and quietly powerful. The moment was organic and unhurried, reflecting their desire for a ceremony that felt truly like them.

The Post-Ceremony Adventure That Made It All Unforgettable

After the ceremony, the couple shared a private lunch in a quiet garden corner of the property. A tasting menu of regional Sicilian dishes was paired with wine from the estate’s vineyard.

Then, in true adventurous spirit, Marie and Ben traded their formal shoes for hiking boots and met a local guide for a private trek on Mount Etna. The trail took them far from the tourist routes and into silence, giving them uninterrupted space to reflect and explore. As the sun sank behind the volcano, they opened a bottle of the same estate wine and toasted to their new beginning.

Advice for Other Couples

Marie and Ben’s biggest takeaway? Trust your team. “Put yourself in the hands of people who know the destination. Trust your elopement planner and photographer, and let yourself enjoy the adventure.”

Their Sicilian elopement is proof that when the setting is this spectacular and the celebration this personal, very little else is needed—just a love for the journey and for each other.

Designing a Relaxed Yet Elegant Destination Celebration

Karli and Kurt kicked off their South of France wedding plans by securing a private villa just outside Toulon. A space that felt comfortable and private, yet still elevated enough to host such a meaningful event. “They wanted something that felt like home,” their planner shared. “The location gave them space to be present with their guests and enjoy every moment.”

With guidance from Wonder Events, the couple worked closely with a curated group of local vendors for florals, catering, beauty, and more. Creating Ceremony Moments That Felt Meaningful and Personal
